The culinary journey began with the exquisite starters we had chosen. The sea bass ceviche was a delight for the taste buds. The freshness of the fish combined with the subtlety of the citrus and herbs created a perfect harmony of flavors, making it a light and refreshing starter. The beef carpaccio was also a true revelation. The thin slices of beef combined with the arugula, Parmesan shavings, and basil leaves created an explosion of flavors in the mouth, while maintaining the dish's characteristic tenderness. A true symphony of textures and flavors. For the main courses, we opted for a generously garnished warm goat cheese salad. The vegetables and the softness of the warm goat cheese were a true delight for the palate. A simply delicious, balanced, and generous salad. The quail duo with veal sweetbread and chanterelles was simply sensational. The quail was perfectly cooked, tender, and juicy, while the veal sweetbread with chanterelles added a touch of elegance and richness to the dish.
