On June 14, 2025, we dined at 7 p.m. at the Restaurant zur Traube in Brig. The chef offers a selection of award-winning cordon bleu dishes, using fresh, seasonal produce. Everything is prepared fresh and à la minute. Unfortunately, this also meant we had to wait 45 minutes for our food. The friendly waitress explained that a birthday party and several groups were putting a lot of strain on the kitchen that evening. Understandable, but still a bit long. I had the cordon bleu with raclette cheese and asparagus: The cheese was very intense and somewhat overpowered the asparagus flavor. The quality was good, but the vegetable side dish was very sparse. My companion had fish, which was very tasty – although more vegetables would have been nice here too. The preheated plates and the idyllic garden (perfect for the warm evening) were plus points. However, the large number of guests made it quite noisy, which somewhat dampened the atmosphere. In summary: Fresh, high-quality ingredients and handcrafted cuisine, but the long wait and the limited vegetable side dishes somewhat dampened the overall impression. Perhaps the next visit during off-peak hours will be even better! A big thank you to the team nonetheless – we'll definitely be back!
